Roasted Chicken is a popular traditional dish that is known for its rich flavors. Here is the recipe: Ingredients: 1 whole chicken (well cleaned). 2 medium onions (grated). 3 cloves of garlic (crushed). ½ cup of coriander and parsley (chopped). 1 teaspoon of ginger. 1 teaspoon of turmeric. ½ teaspoon of black pepper. 1 teaspoon of sweet red pepper (paprika). 1 teaspoon of salt (to taste). ½ teaspoon of saffron (soaked in warm water). ½ cup of olive oil. ½ cup of water. 2 pickled lemons (sliced). A handful of green olives. — Method: 1. Marinate the chicken: In a bowl, mix the garlic, onion, saffron, spices, olive oil, coriander and parsley. Rub the chicken with the marinade inside and out, then leave it in the refrigerator for at least 2 hours (preferably overnight). 2. Cook: In a large pot, place the chicken with the marinade, and add ½ cup of water. Cook the chicken over medium heat with the pot covered. Turn it from time to time until it is cooked through (about 45 minutes to an hour). 3. Roast the chicken: Once the chicken is cooked, transfer it to a baking tray, brush it with a little butter or olive oil. Place it in the oven under the broiler until it becomes golden. 4. Serve the dish: Serve the chicken on a serving plate with pickled lemon slices and green olives. It can be served with the cooking sauce remaining in the pot after draining it. Enjoy!
